Ingredients needed for this lemon blueberry blondie

Butter – I use a salted butter for just about everything! my personal favorite is a grass fed organic butter from costco.

sugar – again my favorite organic sugar is from Costco

Powdered Sugar – use a high quality powdered sugar

Eggs – these are the binding agent

Vanilla Extract – Adds such a layer of flavor

Lemon Juice & Lemon Zest – real lemon flavor is like no other, the lemon zest and lemon juice will amplify these blondies so much!

Frozen Blueberries – adds a burst of berry flavor

Fresh Milled Spelt – Fresh milled is always better, not only do the benefits outweigh AP flour, but some people with gluten sensitivities can handle fresh milled grains. Spelt particularly is a good grain for those sensitive to gluten, although gluten is still present, it is easier to digest for some. Not if you have celiac though.

🌾 Why Use Fresh Milled Flour?

Using fresh milled wheat (I used soft white wheat berries for this recipe) brings out the natural flavor of the grain and gives these blondies a rich, nutty taste with a soft, cake-like texture. If you mill your flour at home, you know there’s nothing like the aroma of freshly ground wheat mixing with the scent of lemon and blueberries in your kitchen.

Don’t have a grain mill? No worries! You can still try this recipe using whole wheat pastry flour or even all-purpose flour in a pinch—but if you can get your hands on soft white wheat berries, you’ll taste the difference!


Ingredients You’ll Need

  • 1 cup butter (softened)
  • 1 ½ cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • Juice of 1 lemon + 1 tbsp zest
  • 2 cups soft white wheat flour (fresh milled)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups fresh blueberries (you can use frozen—just don’t thaw!)

Directions

  1. Preheat your oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Beat in eggs, vanilla, lemon juice, and lemon zest.
  4. In a separate bowl, whisk together the freshly milled flour, baking powder, and salt.
  5. Slowly add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the blueberries.
  7. Spread the batter evenly in the pan and bake for 30–35 minutes, or until golden and a toothpick inserted comes out clean.
  8. Cool before cutting into squares. Enjoy!

Lemon Blueberry Blondies (Using Fresh Milled Flour)

These delicious lemon blueberry blondies are so simple but taste like a million bucks! Using fresh milled spelt & lemon juice and a frosting made from blueberries.

Equipment

  • 1 Large Bowl
  • 1 Wooden Spoon
  • 1 Wisk or fork

Ingredients
  

  • ½ Cup Salted Butter, melted 8TBSP
  • ½ Cup Sugar
  • ½ Cup Powdered Sugar
  • 2 Large Eggs room temperature
  • 1 tsp Vanilla Extract
  • 1 tbsp lemon juice
  • 2 tbsp lemon zest
  • 1⅓ Cup Fresh Milled Spelt Fresh Milled hard white wheat will work also
  • ½-1 Cup Frozen Blueberries

Blueberry Lemon Icing

  • ¼ Cup Frozen Blueberries
  • 2-3 tbsp lemon juice start with 1
  • 1 tbsp lemon zest
  • 1 cup powdered sugar

Instructions
 

Lemon Blueberry Blondies

  • Pre-heat the oven to 350℉ and line a 8×8 pan with parchment paper
  • Melt the butter & sugar, take off heat right before butter is all the way melted.
  • in a large bowl whisk together the melted butter & sugar combo, whisk in the powder sugar until well combined. This should take about a minute and it will be thick.
  • next add eggs, and vanilla and combine for about another minute.
  • next add lemon juice and lemon zest and whisk until well combined.
  • Add the fresh milled flour and stir to combine and let sit for about 5 minutes
  • Add the batter into prepared pan and smooth it out
  • bake until 18-25 minutes (this will vary when using fresh milled, depending on how fine your flour is, start with 18 minutes and keep a close eye. The edges will be barley browned & a toothpick will come out pretty clean with a few crumbs. Should be pretty light in color. Cool on a wire rack.

Lemon Blueberry icing

  • add frozen blueberries to a small saucepan and melt them down until they are soft and juicy or put in the microwave for about 10-15 seconds to soften the berries.
  • remove from heat
  • add the lemon juice to the saucepan, then pour into a small bowl, (do not add the berries)
  • add lemon zest & stir in the powder sugar
  • add more lemon juice if it is too thick
  • Once the blondies are cooled and have set, smooth the icing over top
