My family was introduced to buckwheat about a year ago when our friends were visiting and prepared buckwheat pancakes for us! They were SO good and left us feeling full for so long!!
Every since that morning we have been making buckwheat pancakes, which are so good, but I wanted to experiment and see if we could use the same flour and bake other things, like cookies. Guess what?! It works AND is SO yummy!

Chocolate Walnut Buckwheat Cookies
Full of chocolate and walnuts this gluten free buckwheat cookie is one you're going to want to make!
Ingredients
- 8 Tbsp Soften Salted Butter
- ½ Cup Brown Sugar
- ¼ Cup White Sugar
- 1 Egg
- 1 Tsp Vanilla Extract
- 1 ½ Cup Buckwheat Flour or Groats Blend or grind buckwheat groats
- ½ Tsp Baking Soda
- ½- 1 Cup Chocolate Chips
- ½-1 Cup Crushed Walnuts
Instructions
- Cream butter, brown and white sugar together
- add eggs, vanilla and cream for a few minutes
- Add buckwheat flour and baking soda to mixing bowl
- Stir in chocolate chips & walnuts
- Let dough chill for at least 30 minutes, up to overnight
- Preheat the oven to 350°
- Bake for 10-14 minutes
